This easy fresh salsa is a reliable staple for casual entertaining and everyday meals. Made with simple pantry ingredients and fresh additions like lime and cilantro, it comes together quickly and delivers big flavor with very little effort.

Ingredients:

  • 1 (28-oz.) can whole tomatoes with juice
  • 2 (10-oz.) cans diced tomatoes and green chilies, such as Rotel
  • 1/4 cup chopped onion
  • 1 jalapeño, quartered and sliced thin
  • 1 clove garlic, minced
  • 1/4 tsp. sugar
  • 1/4 tsp. salt
  • 1/4 tsp. ground cumin
  • Juice of 1/2 a lime
  • 1 bunch of cilantro

Directions:

  • Add the whole tomatoes with their juices, diced tomatoes and green chilies, onion, jalapeño, garlic, sugar, salt, cumin, lime juice, and cilantro to a food processor. Pulse until the salsa reaches the desired consistency, stopping to scrape down the sides as needed.
  • Taste the salsa with a tortilla chip and adjust the seasoning if necessary. Refrigerate for at least 1 hour to allow the flavors to come together.
