Made with simple pantry ingredients and blended until silky, it’s a reliable Mediterranean staple that works just as well for casual snacking as it does for easy entertaining. Ingredients:
- 1½ cups cooked chickpeas, drained and rinsed
- ⅓ cup smooth tahini
- 2 tablespoons extra-virgin olive oil, plus more for serving
- 2 tablespoons fresh lemon juice, plus more to taste
- 1 small garlic clove
- ½ teaspoon sea salt
- 4–6 tablespoons cold water, as needed
- Paprika, red pepper flakes, and chopped fresh parsley, for garnish
- Warm pita bread and fresh vegetables, for serving
Directions:
- Add the chickpeas, tahini, olive oil, lemon juice, garlic, and salt to a food processor or high-speed blender. Blend until the mixture begins to come together, stopping to scrape down the sides as needed.
- With the motor running, slowly add the cold water, one tablespoon at a time, until the hummus becomes smooth and creamy. Continue blending for another 30–60 seconds to achieve a light, whipped texture.
- Taste and adjust seasoning, adding more lemon juice or salt if needed.
- Transfer the hummus to a serving bowl or plate. Swirl the top with the back of a spoon, drizzle with olive oil, and garnish with paprika, red pepper flakes, or fresh parsley. Serve with warm pita and vegetables.
