Ingredients:

  • 2 medium-sized artichokes
  • 1/2 cup Italian breadcrumbs
  • 1 clove garlic, minced
  • 1 tablespoon grated parmesan or Romano cheese
  • 1/2 teaspoon parsley (or 1 tablespoon fresh)
  • salt & pepper to taste
  • 1-2 tablespoons olive oil

Directions:

  1. Prepare artichokes:
    • Cut off top third of artichoke and discard
    • Cut off stem
    • Remove the tough outer leaves by bending them backward until they snap off
    • Using scissors trim off any thorny tips that remain
    • Use a knife to trim the outside of base until none of the dark green area remains
    • If using a medium or large artichoke, open the leaves and remove the fibrous choke and the little purple leaves from the center
    • To avoid discoloration, place in acidulated water (cold water and lemon juice)
  2. Combine breadcrumbs, garlic, cheese, parsley, salt and pepper  
  3. Spread the leaves of artichokes gently and fill the center and spaces between the leaves with the breadcrumb mixture
  4. Arrange artichokes in a baking dish.  Add enough water to cover the bottom of the dish.  Drizzle 1 to 2 tablespoons of olive oil over artichokes
  5. Bake 12-15 minutes
  6. Serve warm
