This citrus ginger tonic is a simple, refreshing staple designed to keep in the refrigerator and serve whenever the moment calls for it. Bright citrus, fresh ginger, and a touch of honey come together in a flexible concentrate that works just as well over ice in the afternoon as it does topped with sparkling water — or something stronger — in the evening. It’s not a juice, not a mocktail, and not tied to any rules. Just a good drink to have on hand.
Ingredients:
(Makes about 4 cups concentrate)
- 2 cups water
- 3–4 thin slices fresh ginger
- Zest of 1 orange (wide strips)
- 1 cup fresh orange juice
- ½ cup fresh lemon juice
- ¼ cup honey, or to taste
Directions:
In a small saucepan, combine the water, ginger slices, and citrus zest. Bring to a gentle simmer and cook for 8–10 minutes, until fragrant.
Remove from heat and let cool slightly. Stir in the orange juice, lemon juice, and honey until fully dissolved.
Strain the mixture into a jar or bottle and refrigerate until completely chilled. Can be stored covered in the refrigerator for up to 5 days. Stir or shake gently before serving.
