These simple banana cookies are a cozy, easy way to use ripe bananas — no loaf pan required. Soft and lightly sweet, they land somewhere between a cookie and a quick bread, with a texture that’s a little different from banana bread but just as comforting. They’re especially good with a cup of coffee and make an easy, unfussy treat to keep on hand.

Ingredients:

  • 2 ripe bananas, mashed
  • 1/2 cup sugar
  • 1/4 cup butter, melted
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup chopped walnuts (optional)

Directions:

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • In a medium bowl, stir together the mashed bananas, sugar, and melted butter until well blended. Sprinkle in the flour, baking soda, and salt, and gently mix just until the dough comes together.
  • Scoop small spoonfuls of dough onto the prepared baking sheet, spacing them slightly apart. Bake for 8–10 minutes, until the cookies are set and lightly golden around the edges.
  • Let cool slightly before serving.
