Ingredients:

  • 1 lb. lean ground beef
  • 1 lb. smoked sausage
  • 2 14-oz. cans of diced tomatoes
  • 1 envelope of onion soup mix
  • 2 tablespoons Worcestershire sauce
  • 1 cup chopped celery
  • chopped celery leaves
  • 1 cup sliced carrots
  • Water
  • Box of Elbow macaroni

Directions:

  1. Slice smoked sausage.  Brown sausage and ground beef.  Drain.
  2. Combine meats, tomatoes, onion soup mix, Worcestershire sauce, celery, celery leaves, and carrots in crock pot.  Add water to generously cover the mixture.
  3. Cook on low heat for at least 5 hours.
  4. Prepare macaroni according to package directions.  Drain and rinse with cold water to stop cooking.  Drizzle with a bit of olive oil to prevent pasta from sticking together.
  5. To serve, spoon the desired amount of macaroni into a bowl; top with the desired amount of soup.  Serving this way prevents the macaroni from absorbing all the liquid of the soup.

Garnish with shredded Parmesan cheese and/or chopped parsley, if desired.
