Ingredients:
- 2/3 c. butter
- 1 1/4 c. sugar
- 1 t. vanilla
- 2 eggs
- 1 c. milk
- 1 c. mashed bananas (about 2 medium)
- 2 1/4 c. flour
- 1 t. baking powder
- 1 t. baking soda
- 1/2 t. salt
- 1/2 c. chopped walnuts (optional)
Topping Ingredients:
- 1/3 c. bitter
- 3/4 c. packed brown sugar
- 2 T milk
- 1 c. flaked coconut
- 1/3 c. chopped walnuts
Directions:
- Preheat oven to 350 degrees F. Grease and flour 13x9x2-inch pan. Set aside.
- Cream butter, sugar, vanilla, and eggs until light and fluffy. Add milk, bananas, flour, baking powder, baking soda, and salt. Beat at medium speed for 3 minutes, scraping bowl occasionally. Stir in walnuts. Pour into prepared pan.
- Bake at 350 F for 40 to 45 minutes, or until golden brown and toothpick inserted in center comes out clean. Cool for 5 minutes.
- For the topping, set oven to broil or 550 degrees F. In a small saucepan combine butter, brown sugar, and milk. Cook over medium heat, stirring constantly for about 2 minutes, or until butter melts. Stir in coconut and walnuts. Spread over warm cake. Broil 4 inches from heat for about 2 to 3 minutes, or until golden brown, watching carefully.
- Cool. Cut into squares and place on a platter to serve.
