Ingredients:

  • 1 cup wild rice, raw
  • 1/2 onion, chopped
  • 2 T. butter
  • 3 chicken bouillon cubes
  • 1/4 cup hot water
  • 1 10 1/2-oz can cream of mushroom soup
  • 1 soup can water
  • 2 3 1/2-oz cans of mushrooms, drained

Directions:

  1. Wash and drain rice.  
  2. Saute onion in butter until soft (5-7 minutes).  
  3. Dissolve chicken bouillon cubes in 1/4 cup hot water.  
  4. Combine all ingredients in a casserole dish.  
  5. Bake at 325 degrees F. for 1 1/2 to 2 hours.  Do not overcook.  
  6. Freezes well.  Garnish with parsley (if desired).
