Ingredients:
- 1 box Jell-O tapioca
- 1 (16-ounce) can of fruit cocktail drained (or fresh frozen fruit blend is also perfect)
- 1 small can crushed pineapple, drained or1 small can mandarin oranges, drained
- 1 pint heavy cream
- 1 cup miniature marshmallows (white or assorted colors)
- 1/2 cup shredded coconut (optional)
Directions:
- Cook tapioca pudding as directed on the box and set aside to cool.
- When the pudding is cooled, stir in drained fruit and marshmallows.
- Whip heavy cream. Fold the cream gently into the pudding/fruit mixture.
