Ingredients:
- 2 boxes of strawberry cake mix
- 1 container of strawberry icing
- 1 container cream cheese icing
- 1 c. sliced strawberries (optional)
- 1 c. coconut, toasted – if desired
Directions:
- Preheat oven according to cake box directions.
- Mix cake mixes according to package directions. Grease and flour 3 nine-inch round cake pans. Divide the batter evenly among the three pans. Bake according to directions until done.
- Meanwhile mix fresh strawberries in with the strawberry icing, if adding them.
- Cool layers on a wire rack.
- Place the first layer on a cake stand. Frost with one-third of the strawberry icing. Repeat with each layer.
- Frost the top and sides with cream cheese icing and top with a few fresh strawberries, if desired.
- Garnish with coconut.
