This Strawberry Coconut Cake is a tropical twist on a classic dessert that’s perfect for any occasion. The light and fluffy layers are filled with a sweet strawberry filling and topped with toasted coconut. Ingredients:

  • 2 boxes of strawberry cake mix
  • 1 container of strawberry icing
  • 1 container cream cheese icing
  • 1 c. sliced strawberries (optional)
  • 1 c. coconut, toasted – if desired

Directions:

  1. Preheat oven according to cake box directions.  
  2. Mix cake mixes according to package directions.  Grease and flour 3 nine-inch round cake pans.  Divide the batter evenly among the three pans.  Bake according to directions until done.  
  3. Meanwhile mix fresh strawberries in with the strawberry icing, if adding them.  
  4. Cool layers on a wire rack. 
  5. Place the first layer on a cake stand.  Frost with one-third of the strawberry icing.  Repeat with each layer.  
  6. Frost the top and sides with cream cheese icing and top with a few fresh strawberries, if desired.  
  7. Garnish with coconut.
