• ¼ c. olive oil
  • 1 clove garlic, minced
  • 1 loaf French bread, cut in half lengthwise.
  • 1 8-oz package of cream cheese, softened
  • 3 T. grated parmesan cheese
  • 2 T. chopped pitted Nicoise Olives
  • 1 cup chopped plum tomatoes
  • Fresh basil leaves
  • Balsamic Vinegar


Mix oil and garlic; spread on cut surfaces of bread.  Bake at 400 degrees F for 8 – 10 minutes or until toasted.  Cool.  Mix cream cheese and Parmesan cheese with an electric mixer on medium speed until blended.  Stir in olives.  Spread on cooled bread halves.  Top with tomatoes and basil leaves.  Cut into slices. Drizzle with balsamic vinegar, yum!
