Ingredients:

  • 2 c. water
  • 1 c. butter or margarine
  • ½ t. salt
  • 2 c. all-purpose flour
  • 8 large eggs
  • 2 c. shredded aged Swiss cheese

Directions:

  1. Position the rack in the center of the oven and preheat to 400 degrees F.  
  2. Lightly grease a baking sheet.  
  3. In a saucepan, combine the water, butter, and salt and heat over high heat, stirring, until the butter melts and the mixture boils.  
  4. Add the flour all at once and stir vigorously until the mixture holds together and pulls away from the sides of the pan.  
  5. Remove from the heat and add the eggs, 1 at a time, stirring well after each addition until smooth.  Return the pan to the heat and add the cheese, stirring until blended.  
  6. Drop the batter by teaspoonfuls onto the baking sheet and bake for 18 to 20 minutes or until puffed and golden.  
  7. Cool on wire racks for about 5 minutes before serving.  

Makes 12-16 servings.
