Ingredients:
- 2 c. water
- 1 c. butter or margarine
- ½ t. salt
- 2 c. all-purpose flour
- 8 large eggs
- 2 c. shredded aged Swiss cheese
Directions:
- Position the rack in the center of the oven and preheat to 400 degrees F.
- Lightly grease a baking sheet.
- In a saucepan, combine the water, butter, and salt and heat over high heat, stirring, until the butter melts and the mixture boils.
- Add the flour all at once and stir vigorously until the mixture holds together and pulls away from the sides of the pan.
- Remove from the heat and add the eggs, 1 at a time, stirring well after each addition until smooth. Return the pan to the heat and add the cheese, stirring until blended.
- Drop the batter by teaspoonfuls onto the baking sheet and bake for 18 to 20 minutes or until puffed and golden.
- Cool on wire racks for about 5 minutes before serving.
Makes 12-16 servings.
