Ingredients:

  • 16 ox. Colby cheese, shredded
  • 2 packages (3-oz each) cream cheese, at room temperature
  • 1 c. finely chopped pecans
  • 2 large cloves garlic, mashed
  • paprika

Directions:

  1. In a bowl, using an electric mixer on medium speed, beat together the cheese, cream cheese, pecans, and garlic until blended.  
  2. Turn the mixture out onto a work surface and form a log about 1 ½ inches in diameter.  
  3. Roll in paprika to coat, wrap in wax paper and chill for at least 2 hours.  
  4. Cut into ¼-inch slices and serve on a decorative platter with crackers.  

Makes 30-36 servings.
