Ingredients:

  • About 2 pounds fresh tomatoes or 2 (14.5-ounce) cans whole tomatoes
  • 2 beef bouillon cubes
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 bay leaf
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon white pepper
  • 1/2 cup butter or margarine
  • 1/3 cup flour
  • 4 cups milk
  • Fresh Crab meat (if desired)

Directions:

  1. If using fresh tomatoes, peel (by placing in boiling water until skin cracks then transfer into cold water until cool, peels should slide right off) and core.
  2. Place tomatoes in a food processor and process until almost smooth.
  3. In a medium pot, combine all ingredients except butter, flour, and milk. Bring mixture to a boil. Reduce the heat and simmer uncovered for 30 minutes. Remove bay leaf.  Press the mixture through a sieve, and set aside.
  4. In a large saucepan, melt the butter; blend in flour until smooth and bubbly. Gradually add milk; bring to a boil over medium heat, stirring constantly. Cook two minutes, then reduce the heat, and gradually add the tomato mixture, stirring until smooth and heated through. 
  5. If desired, add crab meat and heat for a couple more minutes.
