Ingredients:

  • 3/4 c. olive oil
  • 1/4 c. balsamic vinegar
  • 2 T lemon juice
  • 2 T Irish Whiskey
  • 2 T soy sauce
  • 2 T Worcestershire sauce
  • 2 T chopped fresh parsley
  • 1 T dry mustard
  • 1 t. minced fresh garlic
  • 12 turns freshly ground pepper
  • 2 lb. flank steak

Directions:

  1. A day ahead:  In a small bowl combine the oil, vinegar, lemon juice, whiskey, soy sauce, Worcestershire, parsley, mustard, garlic, and pepper.  Place the meat in a large glass baking dish and pour the marinade over it.  Turn the meat to coat it evenly; cover the dish, and refrigerate overnight, turning the meat once or twice.
  2. Before serving:  Preheat broiler or grill.  Broil or grill the meat, brushing with marinade, for about 5 minutes on each side for medium-rare.
  3. Heat the remaining marinade in a small saucepan over medium heat. 
  4. Slice the meat against the grain in thin slices and spoon some of the marinade over the slices.
