Ingredients:

  • 4 flour tortillas, soft-taco size
  • 6 oz. cream cheese
  • 3/4 cup roasted, unsalted peanuts
  • 1 bunch of cilantro leaves
  • 1 tsp. jalapeño
  • Juice of 1 large lime
  • 1 tsp. salt

Directions:

  1. In a food processor, combine cream cheese, peanuts, cilantro and jalapenos. Blend well until peanuts are finely ground and jalapenos are well dispersed throughout the mixture. Add lime juice and salt; process well.
  2. Transfer to a bowl. Cover and chill for 1 hour.
  3. To serve, remove the mixture from the refrigerator; let sit at room temperature for 10 minutes. Spread the mixture evenly over each tortilla, being sure to spread all the way to the edges. Roll up and chill. Slice crosswise to make pinwheels and serve.
