Ingredients:

  • 3/4 c. butter
  • 1 c. sugar
  • 1/2 c. packed brown sugar
  • 2 eggs
  • 1/3 c. orange juice
  • 2 t. grated orange peel
  • 2 c. flour
  • 2 t. baking powder
  • 1 c. flaked coconut

Glaze Ingredients:

  • 1 c. confectioner’s sugar
  • 2 T orange juice
  • 1 t. grated orange peel

Directions:

  1. Preheat oven to 350 degrees F.  Grease 15.5×10.5×1-inch jelly roll pan.  Set aside.
  2. Cream butter, sugar, brown sugar, and eggs until light and fluffy.  Blend in orange juice and peel.  Mix in flour and baking powder.  Stir in coconut.  Spread in prepared pan.
  3. Bake at 350 F for about 20 minutes, or until light golden brown and a toothpick inserted in the center comes out clean.  Cool completely.
  4. For the glaze, blend confectioner’s sugar, orange juice, and orange peel.  Spread glaze over bars.  Cut into 1×2-inch bars to serve.
