Classic Hummus

Ingredients:

  • 1/3 cup good-quality tahini
  • 2 tablespoons extra virgin olive oil
  • 2–4 tablespoons cold water, or more if needed
  • 1/2 teaspoon ground cumin
  • 3/4 teaspoon fine sea salt
  • 2 medium cloves garlic, minced
  • juice of 1 lemon (2–3 tablespoons)
  • 1 (15-ounce) can chickpeas, rinsed and drained

Hummus Directions:

  1. In the bowl of a food processor, combine the tahini and lemon juice and process for 1 minute, scrape the sides and bottom of the bowl then process for 30 seconds more. This extra blending makes the hummus smooth and creamy.
  2. Add the olive oil, cold water, minced garlic, cumin, and salt to the whipped tahini and lemon juice. Process for 30 seconds, scrape the sides and bottom of the bowl then process another 30 seconds or until well blended.
  3. Add in the chickpeas and puree for 3-4 minutes, until the hummus is smooth, scraping down the sides of the bowl halfway through blending.  If it’s too thick, add an additional 1-2 tablespoons of water until desired consistency. Drizzle with additional olive oil or top with chopped fresh parsley or toasted pine nuts.


Roasted Red Pepper Hummus: Add 3/4 cup chopped jarred roasted red peppers to hummus and blend for an additional 1-2 minutes. Top with chopped red peppers.

Spinach & Artichoke Hummus: Add 1/2 cup baby artichoke hearts (drained and chopped), and 1 cup frozen spinach to hummus and blend for an additional 1-2 minutes.

  • green pepper strips
  • red pepper strips
  • Variety of Hummus (recipes above)
  • Pita bread cut into triangles
  • assorted crackers

Directions:

  • Arrange hummus, vegetables, pita triangles, and crackers on a large serving platter.
