Ingredients:

  • 2 T olive oil
  • 2 large Vidalia (or other sweet) onions, chopped
  • 1/3 c. firmly packed dark brown sugar
  • 1-14.5 oz can tomatoes in puree
  • 1/2 c. bourbon
  • 2 T Dijon mustard
  • 2 T Worcestershire sauce
  • 1 t. horseradish
  • 1/2 t. salt
  • 1/2 t. pepper
  • 4 pounds of country-style pork ribs

Directions:

  1. Heat oven to 250 degrees F.
  2. In a skillet heat oil, add onions, and saute until translucent (5-7 minutes).  Remove from heat, add brown sugar, and stir until melted.  Add to a food processor.  Mix in undrained tomatoes, bourbon, mustard, Worcestershire sauce, horseradish, salt, and pepper; blend until well mixed.  Return the marinade to the skillet and cook over medium heat until boiling.  Reduce heat to low, cover, and simmer for 10 minutes.
  3. Place ribs in deep baking dish.  Cover with marinade and bake, covered, until tender, 2 to 2  1/2 hours.  (Increase oven temperature to 275 degrees F after cooking for 1 hour.)
  4. Heat grill for direct grilling.  Grill ribs over low heat, uncovered for 30 minutes, brushing with marinade every 5 minutes and turning after 15 minutes.  Slice ribs individually and serve.
