Ingredients:
- 1 1/2 cup graham cracker crumbs
- 6 Tbsp. butter, melted
- 1 cup heavy whipping cream
- 8-oz package of cream cheese, softened
- 1 tsp. vanilla extract
- 1/4 cup sugar
- 1 pkg (10 oz) frozen berries (raspberries, blueberries, or mixed berries)
- 1/4 cup sugar
Directions:
- In a small saucepan heat berries and sugar until just simmering.; remove from heat and let cool.
- Meanwhile, mix graham cracker crumbs and butter together. Spoon into the bottom of jars.
- In a medium bowl, beat heavy whipping cream until still peaks form.
- In a separate bowl, beat cream cheese until smooth. Mix in vanilla and sugar until well blended.
- Fold the whipped cream into the cream cheese mixture. Divide the mixture evenly into jars and smooth the tops.
- Tops jars with cooled fruit. Garnish with fresh berries or sprigs of mint, if desired.
Makes 6 cheesecake jars(depending on the size of your jars).
Note: I find that 6 or 8oz. wide-mouth jars work best! Also, since I didn’t have frozen fruit handy, I grabbed a can of cherry pie filling instead.
