Ingredients:

  • 1/2 c. oil
  • 4 c. chopped onions
  • 4 cloves garlic, minced
  • 2 c. chopped tomatoes
  • 3 large jalapenos, (seeded if you like), diced
  • salt, to taste
  • 8 oz. tortilla chips, crushed
  • 2 c. grated cheese of choice
  • 24 eggs, cracked and beaten
  • 1 bunch green onions, chopped
  • 2 lbs lump crab meat

Directions:

  1. Saute onions, garlic, jalapenos, and tomatoes over medium heat in a large pan with oil and some salt until the onions turn clear, about 3-5 minutes.  
  2. Add tortilla chips, eggs, cheese, green onions, and salt.  
  3. Cook over medium heat until the eggs are almost done, then fold in lump crab meat.  Season to taste.
