Ingredients:

  • 1 refrigerated pie crust
  • 1-10oz. package frozen chopped spinach, thawed and drained
  • 4 slices bacon, cooked and crumbled (optional)
  • 1 c. fresh mushroom slices
  • tomato slices
  • 1 c. cheese
  • 1 c. half and half
  • 3 eggs

Directions:

  1. Heat oven to 400 degrees F.
  2. Put pie crust in a deep-dish pie plate.  Spread spinach in the bottom of pie crust.  Top with cooked bacon, mushrooms, and tomato slices. 
  3. In a bowl mix half and half, eggs, and cheese.  Pour over spinach and other ingredients.  
  4. Bake at 400 degrees F for 35 minutes, or until a knife inserted into the center comes out clean.
