Ingredients:
- About 2 pounds fresh tomatoes or 2 (14.5-ounce) cans whole tomatoes
- 2 beef bouillon cubes
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 teaspoon onion powder
- 1 bay leaf
- 1/4 teaspoon dried basil
- 1/4 teaspoon white pepper
- 1/2 cup butter or margarine
- 1/3 cup flour
- 4 cups milk
- Fresh Crab meat (if desired)
Directions:
- If using fresh tomatoes, peel (by placing in boiling water until skin cracks then transfer into cold water until cool, peels should slide right off) and core.
- Place tomatoes in a food processor and process until almost smooth.
- In a medium pot, combine all ingredients except butter, flour, and milk. Bring mixture to a boil. Reduce the heat and simmer uncovered for 30 minutes. Remove bay leaf. Press the mixture through a sieve, and set aside.
- In a large saucepan, melt the butter; blend in flour until smooth and bubbly. Gradually add milk; bring to a boil over medium heat, stirring constantly. Cook two minutes, then reduce the heat, and gradually add the tomato mixture, stirring until smooth and heated through.
- If desired, add crab meat and heat for a couple more minutes.
