Ingredients:
- 4 tablespoon butter
- 12 ounces cooked sausage
- 1 cup onion diced
- 1 cup red pepper diced
- 2 cup butternut squash, cubed and roasted
- 12 large eggs
- 2 Tbsp. of mixed fresh herbs such as dill, parsley, thyme
- Salt & pepper to taste
Directions:
- Preheat broiler.
- Beat eggs, salt and pepper and herbs until well-combined.
- Add butter to a large, oven-proof skillet. Once butter is melted, sauté onions and peppers until soft, about 12-15 minutes on medium-high heat. Add the squash and sausage, cook until heated through. Pour eggs over filling and cook until edges start to set.
- Put the pan in the oven and broil until the frittata is puffed and brown on top, 3-5 minutes.
Serves 6-8.
