Salad Ingredients:

  • 2-3 firm ripe peaches, quartered (about 1 lb.)
  • 10 oz. of baby arugula
  • 1 cup crumbled feta cheese
  • 3/4 cup fresh mint leaves, torn into small pieces
  • 3/4 cup toasted hazelnuts

Dressing Ingredients:

  • 1/2 cup extra-virgin olive oil
  • 2 Tbsp. white wine vinegar
  • 1 Tbsp. fresh lemon juice
  • 1 tsp. honey
  • 1 tsp. Dijon mustard
  • 1/4 tsp. salt
  • 1/4 tsp. fresh ground black pepper

Directions:

  1. Heat grill to high, about ~450 degrees. Brush the cut side of peaches with a little oil and place them on the grill, cut-side down. Grill, uncovered, until well charred, about 4 minutes, turning to grill on all sides.
