Ingredients:
- 10 large fresh mint leaves, torn into small(ish) pieces
- 2-3 thick slices fresh watermelon
- 1/2 cup Bacardi light rum (4 oz.)
- 2 tablespoons simple syrup
- 2 tablespoons freshly squeezed lime juice (1 limes)
- Mint sprigs & 2 watermelon wedges, for garnish
Directions:
Mash mint leaves in the bottom of a cocktail shaker. Purée watermelon pulp in a food processor and then add to shaker (should be ~3/4 cup of fruit pulp). Add the rum, simple syrup & lime juice and shake. Fill 2 glasses with ice, and pour in the mojito mixture.
Garnish with sprigs of fresh mint and watermelon spears.
