While this recipe serves 4, this recipe can easily be scaled to serve a large group.

Ingredients:

  • 2 (28-oz) cans of diced tomatoes
  • 1 Tbsp. packed brown sugar
  • 1 Tbsp. lime juice
  • 1 onion, chopped
  • 1 (4-oz) can diced green chiles
  • 1/4 cup olive oil
  • 3 Tbsp. chile powder
  • 4 garlic cloves, minced
  • Kosher salt, fresh ground pepper
  • 1 cup Monterey Jack cheese
  • 8 large eggs
  • 1 avocado, sliced
  • 3 green onions, thinly sliced
  • 1/2 cup cilantro, chopped
  • Lime wedges
  • 8 corn tortillas, warmed

Directions:

  1. Adjust oven rack to middle position and preheat oven to 500°F.
  2. Drain tomatoes, reserving 2 cups of drained tomato juice. Mix brown sugar and lime juice into tomato juice.
  3. In a separate bowl, combine onions, chiles, oil, chili powder, minced garlic, 1/2 tsp. salt, and diced tomatoes. Spread mixture evenly over baking sheet. Roast mixture until charred, 35-40 minutes, stirring halfway through.
  4. Reduce heat to 400 degrees. Combine roasted tomato mixture and tomato juice in a 13×9 baking dish. Sprinkle with salt and fresh ground black pepper to taste. Sprinkle cheese over tomatoes. Using the back of a spoon, make 8 3-inch wide indentations in tomato mixture. Put one cracked egg in each indentation. Season eggs with salt & pepper to taste.
  5. Bake about 13-16 minutes. Egg whites should be beginning to set but still have movement when shaken. Remove from oven & tent with aluminum foil for about 5 minutes. Serve with avocado, green onions, cilantro, lime wedges & warm tortillas.
