Ingredients:

  • 24 oz. fresh cranberries
  • 1 cup fresh lime juice and all of the zest
  • 3 T. minced shallots
  • 1 t. salt
  • 2 bunches cilantro (some stems are OK)
  • 3 jalapenos, chopped (seeds removed if you don’t like it spicy-hot)
  • 1 T. minced fresh garlic
  • 2 1/2 cups light brown sugar
  • 1/2 cups cracked black pepper (it really calls for that much) or to taste

Directions:

  1. Combine all of the above in a food processor and pulse until it is the consistency of chunky salsa.  (Most home food processors are not big enough to do this in one batch. Add half of the above and do it twice. Then blend together in a bowl.)
  2. Refrigerate overnight.  (Relish is better the second day.)

Serve chilled with your turkey feast, on top of a turkey sandwich or on top of oysters on the half-shell. Note: cutting this recipe in half still yields a hefty portion.
