Ingredients:

  • 1 1/2 cup graham cracker crumbs
  • 6 Tbsp. butter, melted
  • 1 cup heavy whipping cream
  • 8-oz package of cream cheese, softened
  • 1 tsp. vanilla extract
  • 1/4 cup sugar
  • 1 pkg (10 oz) frozen berries (raspberries, blueberries, or mixed berries)
  • 1/4 cup sugar

Directions:

  1. In a small saucepan heat berries and sugar until just simmering.; remove from heat and let cool.
  2. Meanwhile, mix graham cracker crumbs and butter together. Spoon into the bottom of jars.
  3. In a medium bowl, beat heavy whipping cream until still peaks form.
  4. In a separate bowl, beat cream cheese until smooth. Mix in vanilla and sugar until well blended.
  5. Fold the whipped cream into the cream cheese mixture. Divide the mixture evenly into jars and smooth the tops.
  6. Tops jars with cooled fruit. Garnish with fresh berries or sprigs of mint, if desired.

Makes 6 cheesecake jars(depending on the size of your jars).

Note: I find that 6 or 8oz. wide-mouth jars work best! Also, since I didn’t have frozen fruit handy, I grabbed a can of cherry pie filling instead.
