Skewer Ingredients:
- cherry tomatoes
- marinated mozzarella balls (recipe follows)
- baby spinach
- artichoke hearts
- assorted olives (such as Kalamata and Castelvetrano)
- cheese tortellini (cooked according to package, and cooled)
- wooden skewers
Marinated mozzarella ball ingredients:
- 3/4 good-quality olive oil
- 2 cloves of garlic, minced
- 1 Tbsp. each of fresh basil, oregano, and thyme (in a pinch, you can substitute 1 tsp. each of dried basil, oregano, and thyme)
- 1/4 tsp. crushed red pepper
- 1/4 tsp. sea salt
- 16-oz mozzarella balls
Directions:
Marinated mozzarella balls: Mix together the oil, garlic, herbs, red pepper flakes, and salt. Add in mozzarella balls, turning to coat. Marinate for several hours or overnight.
Constructing skewers: Arrange the tomatoes, spinach, artichokes, tortellini, olives, and mozzarella balls on skewers, alternating between ingredients. Serve!
