Ingredients:

  • 3 slices bacon, diced
  • 1/3 c chopped onion
  • 3 eggs
  • 1 1/2 c half and half
  • 1-10oz pkg frozen chopped spinach, thawed and thoroughly drained
  • 1 1/2 c grated Cheddar cheese
  • 1-8 oz. can sliced water chestnuts, drained and chopped
  • 12 slices bread, trimmed
  • 1/3 c butter, melted
  • Paprika

Directions:

  1. Preheat oven to 350 degrees F.  
  2. In a small skillet cook diced bacon until almost crisp.  Add onion.  Cook and stir over medium heat until onion is tender and bacon is crisp.  Remove from heat and set aside. 
  3. In a large mixing bowl, beat eggs.  Blend in half-and-half.  Stir in spinach, cheese, water chestnuts, and bacon mixture.  Set aside. 
  4. Brush one side of each slice of trimmed bread with melted butter.  Press one slice, greased side down, into each muffin cup so that the corners come up over the edges of the cup.  Spoon about 1/4 c spinach mixture into each bread-lined cup.  Sprinkle with paprika. 
  5. Bake at 350 degrees F for 25 to 30 minutes, or until a knife inserted in the center comes out clean.
