Imagine sinking your teeth into a layer of golden, buttery oat crust, followed by a generous amount of rich, velvety caramel filling. Each bite offers a delightful contrast of textures, with the soft oats and the smooth caramel dancing on your palate.
Ingredients:
- 1 c. butter
- 2 1/2 c. plain flour
- 2 c. packed brown sugar
- 2 eggs
- 2 t. vanilla
- 1 t. baking powder
- 3 c. quick-cooking rolled oats
- 1 c. semisweet chocolate pieces
- 1/2 c. chopped walnut or pecans
- 24 vanilla caramels (7 oz. pkg)
- 2 T milk
Directions:
- In a large mixing bowl beat butter with mixer on medium to high speed for 30 seconds.
- Add eggs and vanilla, beating to combine.
- Add brown sugar; add baking powder and flour, one cup at a time.
- Beat well to combine.
- Stir in oats. Press two-thirds of the dough into a jelly-roll pan lined with foil. (The foil will allow easy cleaning of your pan later.)
- Sprinkle dough with chocolate pieces and nuts.
- In a medium saucepan combine caramels and milk. Cook over low heat until caramels are melted, stirring to combine.
- Drizzle caramel over nuts and chocolate.
- Using a teaspoon, drop the remaining third of the dough over the top.
- Bake at 350 degrees F for 20-25 minutes, or until the top is lightly browned.
- Cool on a wire rack. Remove intact with the foil from the pan. Remove foil. Cut into bars.
Makes about 60 bars.
