Indulge your sweet tooth with our irresistible Oatmeal Caramel Bars. These delectable treats are the perfect combination of chewy, buttery oats and gooey caramel, creating a delightful dessert that will satisfy any craving.

Imagine sinking your teeth into a layer of golden, buttery oat crust, followed by a generous amount of rich, velvety caramel filling. Each bite offers a delightful contrast of textures, with the soft oats and the smooth caramel dancing on your palate.

Ingredients:

  • 1 c. butter
  • 2 1/2 c. plain flour
  • 2 c. packed brown sugar
  • 2 eggs
  • 2 t. vanilla
  • 1 t. baking powder
  • 3 c. quick-cooking rolled oats
  • 1 c. semisweet chocolate pieces
  • 1/2 c. chopped walnut or pecans
  • 24 vanilla caramels (7 oz. pkg)
  • 2 T milk

Directions:

  1. In a large mixing bowl beat butter with mixer on medium to high speed for 30 seconds.  
  2. Add eggs and vanilla, beating to combine.  
  3. Add brown sugar; add baking powder and flour, one cup at a time.  
  4. Beat well to combine.  
  5. Stir in oats. Press two-thirds of the dough into a jelly-roll pan lined with foil.  (The foil will allow easy cleaning of your pan later.)  
  6. Sprinkle dough with chocolate pieces and nuts.  
  7. In a medium saucepan combine caramels and milk.  Cook over low heat until caramels are melted, stirring to combine.  
  8. Drizzle caramel over nuts and chocolate.  
  9. Using a teaspoon, drop the remaining third of the dough over the top.
  10. Bake at 350 degrees F for 20-25 minutes, or until the top is lightly browned.  
  11. Cool on a wire rack.  Remove intact with the foil from the pan. Remove foil. Cut into bars.  

Makes about 60 bars.
