Ingredients:

  • 1/4 t. salt
  • 1 c. couscous
  • 1-10oz pkg. frozen baby lima beans
  • 3 T white wine vinegar
  • 1/4 t. pepper
  • 3 T olive oil
  • 1 pint cherry tomatoes, halved
  • 1/4 c. fresh chopped basil
  • 2 scallions, thinly sliced (white and green parts)
  • 1/2 c. crumbled feta cheese

Directions: 

  1. Bring 3/4 c. water and 1/4 t. salt to a boil.  Add couscous; remove from heat; cover, and let stand 5 minutes.  Fluff with a fork and transfer into a shallow dish to cool.  
  2. Cook lima beans in boiling water until crisp-tender, 3 minutes; drain, plunge into ice water, and drain again.  Set aside.  
  3. Whisk together vinegar, pepper, and remaining salt in a large bowl; slowly whisk in olive oil.  
  4. Stir in couscous, then stir in lima beans, tomatoes, basil, and scallions; sprinkle with feta.

Makes 6 servings.
