Ingredients:
- 1 refrigerated pie crust
- 6 slices bacon, cooked and chopped
- 1 c. chipotle salsa
- 6 eggs, beaten
- 1 c. half and half
- 1 c. shredded Mexican blend cheese
Directions:
Heat oven to 400 degrees F. Line deep dish pie pan with pie crust. Sprinkle bacon into bottom of crust; set aside. Combine salsa, eggs, half and half, and 1/2 cup cheese in bowl. Season with salt and pepper to taste. Pour egg mixture over bacon in pie dish. Top with remaining shredded cheese. Bake on center oven rack for 10 minutes at 400 F. Reduce oven to 350 and bake for 35 minutes more or until knife inserted into the center comes out clean.
