This ham salad sandwich recipe is a unique twist on the classic deli staple. The combination of diced ham, chopped celery, olives, and tangy pickles mixed with cream cheese creates a flavorful spread that is perfect for sandwiches. Ingredients:
- 2/3 c. shredded Cheddar and/or Monterrey Jack cheese
- 1/2 c. coarsely chopped, fully cooked ham
- 1 medium carrot, peeled and coarsely chopped
- 1 stalk celery, coarsely chopped
- 1/3 c. pitted green or black olives
- 1 medium dill pickle, coarsely chopped
- 1-8oz. tub cream cheese with garden vegetables (or plain)
- 12 slices of bread, or 6 hoagie rolls
Directions:
In a medium bowl stir together cheese, ham, carrot, celery, olives and pickle. Spread some cream cheese on one side of each slice of bread. Sprinkle about 1/3 cup of the vegetable mixture on six slices of bread. Top with another slice of bread. Trim crusts, if desired. Slice each into 4 strips (or half hoagie rolls). Store in an airtight container in the refrigerator for several hours or overnight.
These sandwiches are also great topped with fresh lettuce and/or sliced cucumbers.
