Ingredients:
- 2 T olive oil
- 2 T balsamic vinegar
- 4 cloves garlic, minced
- 6 focaccia rolls
- 1 or 2 roasted red bell peppers, cut into squares
- 1 or 2 roasted green bell peppers, cut into squares
- 3/4 c. prepared pesto
- 1 T mayonnaise
- 2 c. torn arugula
- 12 oz. fresh mozzarella cheese, sliced
- 2 to 3 medium tomatoes, sliced
- 1 recipe Basil Vinaigrette (recipe follows)
Directions:
- In a small bowl, combine oil, vinegar, and garlic; brush some onto the focaccia. Place bread on a baking sheet. Bake in 300 degrees F oven for about 10 minutes, or until crisp.
- Add roasted peppers to the remaining olive oil mixture; let stand.
- In a small bowl, combine pesto and mayonnaise.
- Cut rolls in half horizontally; brush cut sides with pesto-mayonnaise. On the bottom of the bread, layer arugula, pepper mixture, mozzarella, and tomato. Drizzle with Basil Vinaigrette. Add the top of the bread.
Basil Vinaigrette
Ingredients:
- 2 T olive oil
- 1 t. balsamic vinegar
- 1 t. red wine vinegar
- 1 t. chopped, fresh basil
- 2 cloves minced garlic
- 2 shallots, chopped
Directions:
Combine in a small bowl or jar. Cover and chill.
