On a bed of fresh focaccia, layers of tangy peppers and creamy mozzarella are paired with a flavorful basil vinaigrette for a sandwich that’s sure to please. Whether you’re packing a lunch or looking for a light dinner, this recipe is the perfect way to enjoy the flavors of Italy in a quick and easy meal.

Ingredients:

  • 2 T olive oil
  • 2 T balsamic vinegar
  • 4 cloves garlic, minced
  • 6 focaccia rolls
  • 1 or 2 roasted red bell peppers, cut into squares
  • 1 or 2 roasted green bell peppers, cut into squares
  • 3/4 c. prepared pesto
  • 1 T mayonnaise
  • 2 c. torn arugula
  • 12 oz. fresh mozzarella cheese, sliced
  • 2 to 3 medium tomatoes, sliced
  • 1 recipe Basil Vinaigrette (recipe follows)

Directions: 

  1. In a small bowl, combine oil, vinegar, and garlic; brush some onto the focaccia.  Place bread on a baking sheet.  Bake in 300 degrees F oven for about 10 minutes, or until crisp.  
  2. Add roasted peppers to the remaining olive oil mixture; let stand.  
  3. In a small bowl, combine pesto and mayonnaise.  
  4. Cut rolls in half horizontally; brush cut sides with pesto-mayonnaise.  On the bottom of the bread, layer arugula, pepper mixture, mozzarella, and tomato.  Drizzle with Basil Vinaigrette.  Add the top of the bread.

Basil Vinaigrette

Ingredients:

  • 2 T olive oil
  • 1 t. balsamic vinegar
  • 1 t. red wine vinegar
  • 1 t. chopped, fresh basil
  • 2 cloves minced garlic
  • 2 shallots, chopped

Directions:

Combine in a small bowl or jar.  Cover and chill.
