Ingredients:

  • 1 avocado, pitted, peeled
  • 2 T fresh lime juice
  • 3/4 t. salt, divided
  • 4 whole-wheat tortillas, or Lavash flatbreads
  • 3/4 lb. shaved, deli roast beef
  • 1 c. shredded iceberg lettuce
  • 1/2 cucumber, peeled, seeded, and diced
  • 1 c. fresh cilantro
  • 1/4 c. green pepper sauce, divided

Directions: 

  1. Cut avocado into 1/2 inch wedges and toss with lime juice and 1/4 t. salt.  
  2. Divide roast beef evenly among 4 tortillas, covering the entire surface.  Sprinkle with 1/2 t. salt.  Top with lettuce.  
  3. Down the middle place, cucumber and avocado pieces.  
  4. Add cilantro leaves, then drizzle each with 1 T green pepper sauce.  
  5. Fold in the sides and roll up. Half diagonally to serve.
