Ingredients:

  • 2-10 oz. packages frozen chopped spinach, thawed and squeezed dry
  • 2 green onions with tops, chopped (1/4 c.)
  • 1/2 t ground nutmeg
  • 1/2 t black pepper
  • 1/4 t salt
  • 3/4 c. low-fat milk
  • 3/4 c. cream cheese (6 oz)
  • 2 large egg whites

Directions:

  • Preheat oven to 350 degrees F.  
  • Grease a 1 1/2 quart shallow baking dish.  
  • In a medium-sized saucepan, melt butter over moderate heat. To the butter add spinach, green onions, nutmeg, pepper, and salt.  Cook for 2 minutes or until heated through.  
  • Add milk and cream cheese; constantly stir for 5 minutes.  
  • When the cheese is melted, remove from heat. 
  • In a medium-sized bowl, beat the egg whites until stiff peaks form.  Gently fold into the spinach mixture and spoon into the baking dish.  
  • Bake uncovered for 20 minutes or until puffy and lightly browned.
