Ingredients:

  • 4 medium-sized tomatoes (vine ripened are best)
  • 1/4 cup vegetable oil
  • 2 T. wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon leaf tarragon, crumbled
  • 1 small ripe avocado
  • 2 T lemon juice
  • 6 pita breads
  • 1 8-oz container of cream cheese, whipped
  • 1 red onion, thinly sliced

Directions:

  1. Core tomatoes; cut into thin slices and place in a shallow dish.  Combine oil, vinegar, salt, pepper, and tarragon; pour over tomatoes.  Cover and chill for 1 hour.
  2. Peel, halve, pit, and cut the avocado into 12 slices; place in a shallow dish and toss with lemon juice
  3. Heat pita bread on a cookie sheet for 10 minutes in an oven that has been preheated to 250 Degrees.  Cut each piece half horizontally to make 12 pockets. 
  4. Spread cream cheese generously inside each pocket. 
  5. Place tomato slices, avocado, and red onion in each half; spoon on additional dressing
