Ingredients:
- 4 medium-sized tomatoes (vine ripened are best)
- 1/4 cup vegetable oil
- 2 T. wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon leaf tarragon, crumbled
- 1 small ripe avocado
- 2 T lemon juice
- 6 pita breads
- 1 8-oz container of cream cheese, whipped
- 1 red onion, thinly sliced
Directions:
- Core tomatoes; cut into thin slices and place in a shallow dish. Combine oil, vinegar, salt, pepper, and tarragon; pour over tomatoes. Cover and chill for 1 hour.
- Peel, halve, pit, and cut the avocado into 12 slices; place in a shallow dish and toss with lemon juice
- Heat pita bread on a cookie sheet for 10 minutes in an oven that has been preheated to 250 Degrees. Cut each piece half horizontally to make 12 pockets.
