Ingredients:

  • 4 T. Olive Butter (recipe follows)
  • 16 slices of crusty bread
  • 2 T. minced canned mushrooms
  • 1 cup minced canned corn beef
  • Pinch of ground cloves
  • Pinch of mace
  • ¼ cup heavy cream

Directions:

  1. In a small bowl, combine the corned beef, cloves, mace, and cream and mix well.  Cover and chill for at least 2 hours.
  2. Position the rack in the center of the oven and preheat to 425 degrees F.  
  3. Spread the olive butter on the bread – spreading it all the way to the edge.  
  4. In a small bowl, combine the beef filling and mushrooms and stir to mix.  
  5. Spread the mixture onto the bread slices. Place on a baking sheet and bake for 3-5 minutes, until lightly browned.  Serve warm.

Makes 16 toasts.

Olive Butter

Ingredients:

  • ¼ cup unsalted butter
  • 2 T. finely chopped ripe or green olives
  • ¼ t. lemon juice

Directions:

In a small bowl, mash the butter until soft and creamy.  Add the olives and lemon juice and fold to blend.  Makes ¼ cup.
