Ingredients:
- 4 T. Olive Butter (recipe follows)
- 16 slices of crusty bread
- 2 T. minced canned mushrooms
- 1 cup minced canned corn beef
- Pinch of ground cloves
- Pinch of mace
- ¼ cup heavy cream
Directions:
- In a small bowl, combine the corned beef, cloves, mace, and cream and mix well. Cover and chill for at least 2 hours.
- Position the rack in the center of the oven and preheat to 425 degrees F.
- Spread the olive butter on the bread – spreading it all the way to the edge.
- In a small bowl, combine the beef filling and mushrooms and stir to mix.
- Spread the mixture onto the bread slices. Place on a baking sheet and bake for 3-5 minutes, until lightly browned. Serve warm.
Makes 16 toasts.
Olive Butter
Ingredients:
- ¼ cup unsalted butter
- 2 T. finely chopped ripe or green olives
- ¼ t. lemon juice
Directions:
In a small bowl, mash the butter until soft and creamy. Add the olives and lemon juice and fold to blend. Makes ¼ cup.
