Because I needed to provide vegetarian menu items, I decided not to make the typical New Orleans items such as the etouffees or jambalayas.  Instead, I made a nice vegetarian version of red beans and rice, which turned out delicious!

Hostess Tips:

  • Picking the date: each year, the Carnival Festival starts on January 6 and ends on Fat Tuesday, the day before Ash Wednesday.  Because of this, a host has some leeway when choosing a date for a Mardi Gras Party; however, the closer you get Fat Tuesday, the more festive it will be. 
  • Embrace colorful decorations for your event, emphasizing the traditional yellow, green, and purple decorations popular in the Big Easy.
