Ingredients:

  • 2 pounds small red new potatoes, cut into 1″ pieces
  • 1/4 cup water (or enough water to cover potatoes)
  • 2/3 cup sour cream
  • 1/3 cup milk
  • 3 tablespoons prepared pesto
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1 1/2 cups fresh pea pods, tips and strings removed – halved
  • 3 green onions, sliced

Directions:

  1. Prepare potatoes: combine potatoes and water in a medium saucepan. Bring to a boil over high heat. Reduce heat to low and cover.
  2. Cook until potatoes are tender, 15-20 minutes. Drain potatoes and cool slightly.
  3. Prepare the dressing: combine sour cream and milk in a medium bowl. Add pesto, mustard, and salt, mixing well.
  4. Add cooked potatoes, pea pods, and green onions, mixing lightly. Cover and refrigerate 4 hours.
