Ingredients:
Crust
- 1/2 cup powdered sugar
- 1 cup margarine, softened
- 2 cups flour
Citrus Topping
- 1 cup pineapple juice
- 2 T. cornstarch
- 1/2 cup sugar
- 1 T. lemon juice
Sauce
- 8 oz. cream cheese
- 1/3 cup sugar
- 1 t. vanilla
Toppings
- blueberries, strawberries, kiwi fruit, or other fruit of your choice, cut into bite-size pieces
Directions:
- To make the crust: Combine the powdered sugar, margarine, and flour and press into a 10×14 deep pan or larger size. Bake at 350 degrees F. for 10 minutes.
- To make the citrus topping: While the crust is baking, combine the pineapple juice, cornstarch, sugar, and lemon juice and cook in a small saucepan until thick. Let cool.
- To make the sauce: Beat the cream cheese, sugar, and vanilla together. Pour over the crust while it’s still warm.
- Prepare Toppings: Pour the citrus topping onto your favorite fruits to keep the fruit from browning. Refrigerate until ready to serve.
- To construct the pizza: Spread the sauce onto the cooled crust. Top with your favorite fruits in a decorative manner.
- Refrigerate until ready to serve.
