Ingredients:

  • 2 Lbs. Squash
  • 1 Cup Mayo
  • 1 Cup grated Parmesan Cheese
  • 1 Small Onion
  • Salt and Pepper to taste
  • 2 Eggs
  • 2 Slices of Bread

Directions:

  1. Boil squash until tender, remove and drain well. 
  2. Beat eggs.  Add all other ingredients to the egg mixture. 
  3. Mix egg mixture and squash together, then put in a buttered casserole dish. 
  4. Rip slices of bread and place on top of the casserole. 
  5. Bake for 30 minutes at 350 degrees F.
