Ingredients:
- 2 Lbs. Squash
- 1 Cup Mayo
- 1 Cup grated Parmesan Cheese
- 1 Small Onion
- Salt and Pepper to taste
- 2 Eggs
- 2 Slices of Bread
Directions:
- Boil squash until tender, remove and drain well.
- Beat eggs. Add all other ingredients to the egg mixture.
- Mix egg mixture and squash together, then put in a buttered casserole dish.
- Rip slices of bread and place on top of the casserole.
- Bake for 30 minutes at 350 degrees F.
