Ingredients:

  • 1 26-oz pkg. of frozen hash browns
  • 1 medium onion chopped
  • 1/2 cup red pepper, finely chopped
  • 1 can mushroom soup
  • 1 cup of milk
  • 1 cup of grated cheese
  • 1 Tablespoon of oil
  • Dash of hot sauce
  • Salt and Pepper to taste

Directions:

  1. Saute onion and green pepper in oil until soft.
  2. Add frozen shredded hash brown potatoes.
  3. Add a can of condensed mushroom soup.
  4. Add milk and cheese.
  5. Add salt and pepper to taste. Add a dash of hot sauce.
  6. Cook for 4 minutes or so until everything is blended and put in a greased casserole dish.
  7. Bake at 350 degrees for one hour and lightly browned on top.

To set yourself up for success, prepare this dish the night before, cover and put it in the fridge the night before. Simply bake it in the morning.
